Ruby, with a bit of orange. It is intense and complex on the nose, with fruity aromas of cherry jam, ethereal and spicy. It tastes dry, soft, warm and rightly tannic. Full bodied, it has a persistent and intense finesse.
Fermentation with submerged cap in stainless steel silos. It ages in Slavonian oaks and in 2nd hand barriques. It refines in the bottle.
PAIRING AND TEMPERATURE
Excellent for all meat preparations: lamb, pork, game. Traditionally is perfect with pecorino cheese and the roasted suckling pig. Serve at 16°C - 18°C.
